Eggplant Involtini with Homemade Ricotta

Eggplant Involtini — this is one of my all-time favorite recipes. I made it last night, but instead of frying the eggplant, I roasted it (details in the recipe), which simplified the process. I also simplified the filling: simply used lemon zest, salt, and bread crumbs. Such a treat!
